How to Make Hearty Overnight Oats on the Road | Road Trip Soul

My friend Kim had the idea to make overnight oats on our recent road trip out to Big Bend and they were SUCH a success that I’ve been making them pretty much every day since. Seriously, this oatmeal will change your life because it’s pretty much the easiest thing ever and is also delicious.

We used rolled oats, but if you would like to use Steel Cut instead, just add extra almond milk and make sure to let it sit longer. If you use a mason jar, you can even use the measurements on the side of jar to measure out your ingredients and you don’t need to bring measuring cups. Such a good idea to eat well while traveling!

Hearty On-the-Road Overnight Oats

As well as being easy and delicious, this no-cook recipe is jam-packed with nutritional value! The rolled oats have 4g of dietary fiber (15% of your daily needs) while the chia seeds provide plenty of the good fats, Omega-3s. The almonds and almond milk provide some much-needed protein, fat, and calcium. Make it in a mason jar for easy measurement of ingredients and to eat it on the go. Good for on the road as well as at home. If you want to prepare enough for several days, it will stay good in the refrigerator for up to a week.

Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1 cup unsweetened regular almond milk
  • 1 tbsp chia seeds
  • 2 tbsp slivered almonds
  • 2 tbsp dried cherries
  • 2 tbsp dried shredded coconut

Instructions

  1. Layer your dried ingredients in the bottom of a mason jar.

  2. Add almond milk until the ingredients are completely covered. Put the lid on the jar and shake vigorously to combine the ingredients.

  3. Leave in refrigerator or cooler overnight, or at least 2 hours while the chia seeds and oatmeal absorb the almond milk. Enjoy straight from the jar with a spoon.
